Peach Chai Scones & Unexpected Kindness

I love being surprised by kindness.

A couple of weeks ago, I visited a new coffee shop in Lexington, KY, called A Cup of Common Wealth. It’s a smaller shop, tucked away on the outskirts of downtown next to Thoroughbred Park. They’ve got a really welcoming vibe (you’ll probably get high-fived) and excellent coffee. The night that I was there, for some reason or other, the owners had an extra box of chai tea latte concentrate. So they gave it away.¬†Just asked around the shop if anyone could use it, and I was the lucky recipient. A bit of unexpected kindness that made me smile.

Of course, I did what any normal person would do with a box of chai tea concentrate – I made scones. The warm chai spices (cinnamon, cardamom, ginger, cloves) go perfectly with peaches, so the extra peach in my fridge found its way into the recipe. There’s also some wheat flour in the dough, and the ‘healthy’ element it brings clearly needed to be counterbalanced with a chai glaze. These scones are great with coffee, and even better shared with a friend.

Peach Chai Scones

1 cup + 1 tbs. all-purpose flour
1 cup wheat flour
1/4 cup + 1 tsp. sugar
1 tbs. baking powder
1/2 tsp. salt
1 cup heavy cream
1/4 cup chai tea latte concentrate
1/8 tsp. each cinnamon, cardamom, ginger, and ground cloves
1 c. peaches, chopped and peeled (about one peach)

1 tbs. chai tea latte concentrate
4-5 tbs. powdered sugar
a dash each cinnamon, cardamom, ginger, and ground cloves

1) Preheat the oven to 425 F. In a small bowl, stir together the peaches and 1 tbs. of regular flour.  In a medium-sized bowl, whisk together the remaining dry ingredients: 1 cup all-purpose flour, the wheat flour, sugar, baking power, and salt. Add the peaches to the dry ingredients. Mix the cream and chai tea concentrate, then add to the dry ingredients. Stir just until combined.

2) Drop the dough by large spoonfuls onto an ungreased cookie sheet. Bake for 12-15 minutes.

3) While the scones cool, make the glaze. Whisk the spices and 4 tbs. of the powdered sugar into the chai tea concentrate. The glaze should be of drizzling consistency, so add the last tbs of powdered sugar if it needs to be thickened. When the scones are mostly cool, drizzle them with the glaze.
