As we move into the end of Holy Week and towards Easter, we’re going to keep this week’s Friday post simple. For both of us, Good Friday is one of  the most somber and holy days of the year. It’s a marked contrast to Easter, which is one of the most joyous. And since every celebration needs a great dessert here are a few to consider:

Coconut cake from Willow Bird Baking – If you like coconut, you’re guaranteed to love this!

Strawberry cupcakes from Annie’s Eats – The grocery store had some fantastic strawberries last week. Perfect timing for cupcakes like these.

Carrot Cake Cheesecake from Cooking Classy- Carrot cake is pretty common for Easter, as a result of the Easter bunny maybe? Whatever the reason, it’s tasty and this version adds a layer of smooth creamy cheesecake. Yum!

Spring Flower Cupcakes: This isn’t recipe per se, but a fun way to decorate your favorite cupcakes to look like spring flowers. I think they are adorable and are perfect for folks like me that are not good at frosting!
