On Our Plates: Winter Squashes



There are a ton of different types of winter squashes out there, with the most common being the butternut, acorn, and spaghetti squashes (all featured in the photos above). Epicurious has a lovely visual guide if you want to see more photos and learn specifics about the different varieties. Even this guide is only the tip of the squash iceberg. There are dozens of varieties, but be sure to know what you are buying because some are better left as decorations!

Once you get them home, figuring out what to do with them can be a bit daunting, but we’ve rounded up some of our favorite savory recipes to help you meet the challenge. If you want sweets, try our pumpkin round-up from a few weeks ago!

Spaghetti Squash Burrito Bowls from Oh My Veggies: Many spaghetti squashes recipes treat the squash like noodles, but this looks like a different spin. I have a squash so I’ll have to test it!
