Now that the holidays have passed, it’s time to hunker down and stick it out through the cold, grey months of winter. Thankfully, a great bowl of hot soup can help make at least part of your day a little warmer.
Here are some links to soups we thought looked especially good. Let the meal planning begin!
Black Bean and Quinoa Soup by Post Punk Kitchen: It’s oddly difficult to find a good vegetarian Mexican-style soup. Many I’ve tried are kinda flat. I have high hopes for this one. Plus it’s vegan, but if you are like me, you’ll top with cheese!
Slow Cooker Vegetarian Lasagna Soup by Foodie Crush: I’ve seen plenty of lasagna soups around the web, but this one is both vegetarian and the slow cooker does most of the work!
Thai Coconut Corn and Mushroom Soup by Bev Cooks: This sounds like the perfect answer to a cold, dreary day. Plus, I love coconut milk in soups. So good.
White Bean and Roasted Mushroom Soup by She Wears Many Hats: I love mushrooms! Plus, this soup uses the white beans in a puree for a creamy taste with cream (and the accompanying calories).
Chipotle Chicken and Corn Chowder from Brown Eyed Baker: A spicy twist on corn chowder.
Cream of Zucchini Chowder from A Taste of Pie – A filling soup and a great way to get in your veggies.
Koolsoep (Cabbage Soup) from The Dutch Table – Finally – a good way to cook with cabbage!
Carrot and Ginger Soup from Manger – Mimi Thorisson’s recipes never fail to please, and I’m sure this will be no exception.
