It’s Easter time again! I absolutely love Easter. Of course the meaning of Easter resonates on a deep spiritual level, but it also feels like so many of it’s spiritual themes are also paralleled in nature- hope, grace, celebration, promise.
It is hard not to get caught up in the joys of Spring, especially here in the South where snow and grey has given way to sunny skies, budding trees, and daffodils. I just love daffodils, they are one of the happiest flowers in my opinion and bloom just when you think winter will do you in! Perfect.
Easter has also always been a big deal in my family, with a big family celebration, egg hunts, and food! However, this year things are a bit different. Due to a dozen conflicting family commitments we moved Easter. Well, just the family celebration. Of course this means that actual Easter day is wide open. Since we always do a traditional lunch with my family, this year I am thinking of a big brunch after church with other Nashville folks.

Carrot Cake Baked Oatmeal by Food Done Light: Another great make ahead brunch item and a healthy way to satisfy the carrot cake craving that always seems to hit this time of year
Browned Butter Buttermilk Banana Bread with Strawberry Butter by Averie Cooks: Ok, that is a really long title with a lot of b-words, but man does it look good!
Angel Food Cupcakes with Chocolate Coconut Icing and Crispy Phyllo Nests by Half Baked Harvest: I can still make dessert, right? If nothing else, just go look at the pictures of these adorable cupcakes. Plus- coconut and chocolate, I am there!

Choose Your Own Adventure Frittata– similar to a crustless quiche, this is another great make ahead option using whatever veggies you have handy.
Sweet Potato Blintzes– These tasty blintzes were originally made earlier in the year and featured a cranberry sauce, but are too tasty not to make again, perhaps with a strawberry or blueberry sauce?
Raspberry White Chocolate Cream Scones– Every brunch should have scones.
Coconut Cake with Lemon Curd– Coconut always seems right for easter and with the lemon curd filling, this one is perfect for spring!
