I will be honest, lately I have been in a bit of a dinner rut. Most of what I make for dinner is already on the blog (see Five Vegetarian Dinners in Under 30 Minutes). I’ve been trying to make new things in an effort to find great things to share with you, but nothing lately has wowed me. And I don’t want to share something mediocre with you. That is not the point of this blog. The point is to share amazing food that we love.
Then I had a revelation. There are some recipes from other bloggers that I love and do make fairly often. In fact, I make them almost exactly like the original so I thought, why not just share those!
So here are some tried and tested recipes and why I love them. All of them are easy to do on a weeknight, which is part of the appeal, but are not lacking in flavor.

One Pan Mexican Quinoa from Damn Delicious: I call this, how to be vegan without even trying. I think Tim and I had this a couple times before realizing it did not have cheese. And we love cheese. But this doesn’t need it and it is so good.
One Pot Pasta Primavera from Oh My Veggies: I love a good pasta recipe and this one if so tasty. Plus it is all made in one pot so there is minimal clean up! I often use extra mushrooms and broccoli instead of the asparagus to mix it up a bit.
Copycat Panera Broccoli Cheddar Soup from Yammie’s Noshery: I am usually skeptical of copycat recipes, but this one is really good. I don’t make it in a bread bowl, but it is an easy and tasty meal.
Mexican Sweet Potato Skins from Pinch of Yum: These are more like twice baked sweet potatoes than potato skins, but they are tasty. Cook the sweet potatoes in advance to make them work for a quick weeknight meal.
Two Bean Sloppy Joes from A Couple Cooks: I have tried a couple vegetarian versions of the Sloppy Joe and this one is the clear winner. You won’t miss the meat at all!
